【揭秘 】阿一鲍鱼大公开!教你们怎样正确的吃出鲍鱼的精华?

话说有谁不知赫赫有名的阿一鲍鱼是出了名的讲究真材实料,
很荣幸的这次的美食拍摄通告一出,
乍看之下是原来是【阿一鲍鱼#富临酒家】,
也是我的恩师[林师傅],
屈指一算,我和恩师也认识了8年之久,
当知道这一期即将跟恩师一同拍摄心情感觉还是蛮期待,
我相信这一期的推出,
观众朋友们肯定对鲍鱼的了解和认知大有进步,
想知道为何【阿一鲍鱼】能在这高手如云的鲍鱼界中脱颖而出且独竖一帜吗?
不外乎是其数十年来坚持选用上好的鲍鱼原料来烹煮以及一贯顾客至上的宗旨。
当然也包括主厨用心的研发,将潜藏在鲍鱼里的奇妙口感与味道诱发出来,
我想才使得饕客们对【阿一鲍鱼】的支持及热爱“金牌不倒”。

网鲍 - 其海产味极浓郁, 当你横切时会看到有网纹,市价为$1380⁠⁠⁠⁠.

北海道干鲍 - 原产于澳洲,鲍鱼的边很薄, 体型偏大,由于加工 于日本,因此被称为“北海道干鲍”。市价为$398

窝麻鲍 - 其特别之处是鲍身两端因用绳串起来晒借此有两个绳孔,市 价为$398

吉品鲍 - 鲍鱼肚上有着明显的压线横是因为上下两头用麻绳串起晒干时压过体型 偏小。市价为$198

鲍鱼的色泽与透光度,也将决定于是不是一颗好鲍,这点也是很重要,
请大家留意影片中,我与林师傅将为大家示范...

以上为大家解说的是“干鲍”价格也比较于昂贵,
而另一种比较普遍的是“鲜鲍”,我相信大家应该不会陌生,
因为逢年过节,“鲜鲍”也就是“罐头鲍”是非常受消费者的喜爱,
接来下,
我们时常会听到“阿...你的是几头鲍阿,我的是XX鲍,几钱多少钱之类...
其实,鲍鱼的等级品种不能以多少“头”来判断它的价格与等次,
举个例子 :
如果600克可以秤4颗鲍鱼, 那就是4头。。。
以此类推,
也就是说:如果一罐鲍鱼里面装了两粒鲍鱼,我们称之为2头鲍,
观众朋友们,这绝对是跟价钱称不上关系
所以别在摆乌龙了哦....

鲍鱼的价值一般取决于它的色泽及浓郁的海产味再来是里头的溏心部分,
至于溏心,也是鲍鱼肚内的一门学问,大家可要好好的见识一番哦!

接下来是,我在荧幕面前第一次为我的林师傅下厨,
要怎样把干鲍鱼“煎”的入味...,使得浓稠的鲍鱼汁完全覆盖及渗透整颗鲍鱼,
当然火候的掌控可是很重要,在这里秀一秀给大家看 。

煮好了,当然是教大家怎样正确的吃跟鲍鱼真正的切法,
大家可别以为就只是切一刀放进嘴里就这样简单,
其实正确的吃法是将鲍鱼切成45度及不成规则的形状,
这样的吃法,才会让你越嚼越有滋味,口感更是不在话下。

  1. Wah..that is how too cook the abalone. I actually though all abalone is soft and ready to eat like in the can. Thank you for the cooking information!

  2. Dried abalone is very famous. Each time they want to cook it, they have to soak it in clean cold water at least 10hours.. See, you have to be patient to wait for super yummy food!

  3. The ramen looks so simple, yet it contain the most expensive sauce in the world hahaha, just imagine how it taste!

  4. I think this restaurant serve the best quality of abalone, if you look at the color before light you would know! Actually abalone take more than 3 years to be ready for the market. Imagine how long you have to wait. It also so expensive.
