Yun Nan Original Ecology Hot Pot


Steamboat is a culture or I would say common practice well-liked by many. What I like about steamboat are the numerous selection of ingredients to pick from and you can simply cook what you want. I particularly find delight in this approach because family or friends will not have time to look at their phones but would be busy with cooking. It’s a great bonding idea which you can take this opportunity to catch up and bring relationship closer, that is why I always like eating sessions.

I have covered quite a lot of steamboat places but non is comparable to Yunnan Original Ecology Hotpot. Bringing in fresh wild mushroom, herbs and spices imported from Yunnan, the restaurant merged modern dining and advocates healthy eating into one unique concept of it’s own. The wild mushroom hotpot recipe has been passed down from more than 100 years ago which has ample nourishing benefits with the most natural formula. After learning that wild mushrooms can prevent several illness and build up immune system, Yunnan Original Ecology Hotpot was in my dine-out list every week for both a tastier and hearty experience.

Lijiang Spicy Tomato Nourishing Soup
There are 4 different soups in 1 hot pot, wild mushroom, fresh tomato, spicy “ma la” and chicken herbal. As the topic today is about wild mushroom, I want to emphasise more on the flavor and benefits of it. Placed in the middle portion, 17 types of wild mushrooms are boiled together for more than 20 hours, you can imagine how intense the mushroom taste will be. If you have not eaten wild mushrooms before, it tastes like “grass” that is aromatic and carries a natural sweetness, not salty at all. The wild mushroom flavor practically dominates your taste buds for a few minutes.

All wild mushrooms has to be boiled for 10 minutes to release it’s fullest flavors. Place everything into the soup and drink it while it’s hot, the nutritional benefits are amazingly good with taste that is unbelievably robust. Those who likes to eat mushroom will love it, soft in texture and rich in nutrients.

My first hawker food video

When I was first told by the video director to do a shoot at Satay By The Bay, I was thrilled because this is my first time filming for a hawker centre instead of the usual restaurant. As a Singaporean, I love hawker food, it is an essential element of the local food culture. The best thing is that I grew up eating hawker food, it has now become a part of me. I would be able to share with you the history and top choices of the finest local delights at the back of my hand!

Hokkien Mee

Originally created in world war II and has now became a must-have in our traditional local cusine. The crucial part of this dish is the sauce, this stall has done particularly well using simmered prawn heads and dried fish creating a robust flavor when stir-fried with the noodles. Not forgetting the pork lard which enhances the overall fragrance!


Coin Prata
One of my childhood favourites, designed to be smaller than the usual, the crispy coin prata is not too oily and so buttery fragrant! It is exceptionally delicious when you dip it with a decent amount of curry. Using fish instead of chicken curry, the prata absorbs the curry like a sponge. You can’t get enough of just one.

Stingray
I was hooked to eating this almost every night when I had my frequent visits to Malaysia. The fish is first pan-fried, drizzled with their special sauce and covered immediately till the fragrance is locked into the flesh before opening up. The flavor is entirely integrated and the combination of the chilli paste taste superb. It goes excellent with cold beer.

The Best Penang Restaurant in Singapore

Flying to Penang is a yearly event that I do to pray at the temple of '九皇大帝'. I have been practicing this tradition since 20 years ago and I really like Penang's unique culture and food. Hoping to find similar taste of Penang in Singapore, I tried many places but to no avail, none have the authentic flavor that is comparable. However recently when I was introduced to this restaurant called Island Penang which serves traditional Penang food, I was elated! The vibe, smell and setting of the restaurant blended so well, giving me a positive impression that this is the one that I have been searching for the longest time.

One of the signatures, the prawn noodles here steals the limelight with it's robust broth filled with strong prawn flavors, natural pork bone sweetness, herbs and spices. Served with two types of noodle, yellow noodle and thin vermicelli giving it a different bite texture.  This bowl of delicacy is added with a tinge of chilli oil that works like magic lifting your appetite.

Seems easy to cook but in fact if is not. Fried Kway Teow requires good frying skill to create that wok-hei flavor that I always emphasize on. I can smell it even before digging in. Not stingy on the ingredients, it comes with thick fish cakes, Chinese sausages, bean sprouts and fresh big prawns. Each piece of flat noodle is fragrantly fried, a must-order when you are here.

I would say this is a perfect bowl of Assam Laksa compared to many others that I have tried. Not just only because of the taste but the amount of effort put in this dish. Everything tasted so good, the sourness and spiciness of the broth boiled from more than 20 ingredients are cooked for long hours is not too overwhelming, you would not want to stop drinking simply because it is irresistible. Even the chopped fishes which are the main ingredient are generously served without any bones, catering to the convenience of customers.

Food cooked with Chinese herbs

Never had I come across a restaurant that cleverly uses an extensive range of Chinese herbs  incorporated in their dishes. Shiitake is one that impresses me with it’s distinctive spread. The owners had very good knowledge on Chinese herbs which makes their creations not only tantalizing but beneficial as well. People in this generation are geared towards healthy food as they are more aware of the food they eat. Shiitake would be a great choice if you are seeking for a healthier diet approach.

Highlight of the day is the Herbal Stewed Lamb. Rich in calcium, collagen and protein, it is good for digestion, a nutritious bowl that has numerous health benefits to strengthen your body and relives muscle pain, treat slimming and diarrhoea. Simmered together with a dozen of Chinese herbs for more than 6 hours, you can imagine how much goodness is inside. The mutton odor is not too overwhelming and the flesh is cooked till soft, breaking off easily from the bones. To sum it up, it is not too heaty but amazingly nourishing.

Using more than 10 different types of Chinese herbs, the grilled fish and herbs are wisely cooked together without adding any salt or sugar. I like it spicy yet not too oily, creating an excellent balance. Making use of the nutritious value of these herbs makes this dish both healthy and delectable.

The green curry is exceptionally fragrant, it is worth mentioning because of it’s similar taste to the Japanese curry. Carrying a tinge of sweetness and not too spicy, the best way to eat is to go with white rice. It comes proportionally which you won’t be worried about having left over rice or curry.

Generous filling of chicken and mushroom wrapped with crispy thin outer skin. Soft and fluffy on the inside, prepare for a burst of ingredients exploding in your mouth when you take your first bite. You might want to suck some of the gravy before you let loose the pancake as it is fully packed with moisture.

As Singapore is a cosmopolitan country, we are fortunately exposed to different cuisines from other countries. If you would like to try food in Vietnam, you do not need to travel to eat it but you can enjoy similar tasting fare right here. Dining in Orange Lantern feels like I’m transported to Vietnam. The food, ambience and especially the hand-made silk lanterns hanging from the ceiling makes the interior even more traditional looking. A fun fact to share, Vietnamese food is claimed to more healthy and less oily and they are reported to be ranked at one of the lowest with people who are overweight. Find out more in the video!

Rice paper rolls usually comes with just prawns but Orange Lantern went out of the box and served smoked duck and chicken as well. For people who likes to explore different flavors, this would be perfect! For me, rice paper is the most important role of this dish, the texture can’t be too hard or too soft but must be at the right moisture for a perfect bite, they did it pretty well here.

Chicken is marinated with lemongrass fragrance and pan-seared, mixed with spring rolls and generous serving of bean sprouts, a delicious bowl of chicken noodle with broth that taste scrumptious and light. Adding the special sauce gives off an appetising, refreshing and a sweet tinge of flavor.

A traditional dessert that taste like ‘kway’ at the bottom layer and the upper layer taste like egg. A unique combination that is served slightly warm. It has a soft texture and a fragrant aroma which is quite addictive, you definitely got to try this.
